1 tbsp. olive oil
3 garlic cloves, minced
1 lb. medium shrimp, peeled and deveined
1 tsp. dried oregano
1/4 tsp. ground cumin
1/4 tsp. crushed red pepper flakes
1 tsp. orange zest
Juice of 1 large orange
Mixed greens or hot cooked rice, pasta or polenta (optional)

1. In a large nonstick skillet heat oil over medium-high heat Add garlic; cook and stir 30 seconds. Immediately add shrimp; cook and stir 3 minutes or until shrimp begin to turn opaque.

2. Add oregano, cumin, red pepper flakes. orange zest and orange JUICe. cook and stir 2 minutes or just until shrimp are cooked through. Season with salt and pepper to taste. If desired, serve over mixed greens, rice, pasta or polenta.
