1/4 cup softened butter
4 tsp. coarse-grain mustard
1 tsp. dried parsley flakes
4 (16 oz.) pollock fillets 2 tsp. Cajan seasoning
1. Preheat 375ºF Coat rimmed baking sheet
2 Place fillets on baking sheet; lightly coat with nonstick cooking spray. Sprinkle fillets with seasoning, and salt and pepper to taste. Bake 12 to 15 minutes on until fish flakes easily with a fork. During the last minute of cooking, top fillets evenly with butter mixture. Transfer to a platter, and serve.
