Yield: 6 sandwiches.
6 boneless skinless chicken breast halves
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon chili powder
6 slices part-skim mozzarella cheese
6 French or Italian rolls, split
2 tablespoons fat-free margarine
Lettuce leaves and tomato slices
Salsa or picante sauce, optional
Pound chicken breasts slightly to flatten evenly. Spray both sides with nonstick cooking spray. Combine seasonings; sprinkle on both sides of chicken. Grill over medium-hot coals for 6-8 minutes; turn and grill 4-6 minutes more or until chicken is tender and no longer pink. Top with cheese; allow to melt, about 2 minutes. Grill rolls just until toasted; spread with margarine. Place chicken on rolls; top with lettuce, tomato and salsa or picante sauce if desired.
