1 tbsp vegetable oil
3 cups frozen country-style hash browns
10 oz. smoked sausage
1 tsp. lemon pepper
1 tbsp. butter
5 eggs, beaten
1 cup shredded Cheddar
1. In a large skillet heat oil over medium-high heat. Add hash browns; cook according to package directions until browned. Set aside.
2. Meanwhile, place sausage and 1/4 cup water in a shallow microwave-safe bowl. Cover loosely and microwave on HIGH 3 to 5 minutes or until sausage is heated through. Drain sausage, and cut crosswise into thin slices. Stir sausage and lemon pepper into hash browns. Cover and set aside.
3. In a medium skillet melt butter over medium-low heat. Add eggs; cook and sttr just until scrambled and set. Season with salt and pepper to taste. Stir eggs into sausage mixture, and sprinkle with cheese. Let stand, covered, 3 minutes or until cheese melts. Serve warm.
