Yield: 10 servings.

3 garlic cloves, minced
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1/4 teaspoon pepper
6 turkey bacon strips, cooked and crumbled
1-1/2 cups (6 ounces) shredded part-skim mozzarella cheese
1 loaf (1 pound) Italian bread
1/4 cup shredded Parmesan cheese

In a large skillet coated with nonstick cooking spray, saute garlic over medium heat. Add spinach and pepper; cook, stirring occasionally until heated through. Remove from the heat; cool for 5 minutes. Add bacon and mozzarella; mix well. Slice bread horizontally. Spread about 2-1/4 cups spinach mixture on each half. Sprinkle with Parmesan. Bake at 450º for 6-8 minutes or until cheese is melted.
